Easy Tuna Rice Bean Salad

Today I share a very simple and healthy lunch idea. This is easy to put together, filling and nutritious.

I use tuna in this recipe, I always have canned tuna at home and it can be used to make something delicious without going into too much effect especially if time is of concern.

Fresh cucumber is a lovely addition adding crunch and volume. Corn and black beans are amazing nutrition wise and quite filling. You can use either kidney beans or cannellini beans if you do not have black beans at hand.

I used basmati rice this time. But you can substitute it with brown rice, quinoa or even cous cous of that is your preference.

The main taste and flavour comes from the spicy mayo mix that I make and mix in into the tuna and red onions.

I usually make a batch of the tuna and spicy mayo mix and store in the fridge and add in the rest of the ingredients as I require during the week. So, this way it makes for really quick and healthy lunches.

Let’s get to the recipe

Ingredients

Tuna – 2 can

Red onion – 1 small finely chopped

Corn kernels – ¼ cup

Black beans – ½ cup

Rice – ½ cup cooked

Spinach – ¼ cup finely chopped

Cucumber – ½ cup chopped

Salt

Chilli flakes

Spicy mayo mix (for the 2 cans of Tuna)

Mayo – ½ cup

Sriracha – 2 tablespoons

Tomato sauce – 1.5 tablespoon

Garlic powder – 1 teaspoon

Mustard – 1 tablespoon

Method

  1. Mix up the ingredients for the spicy mayo mix and set aside.
  2. Chop up the red onion finely and place the drained tuna and onions in a bowl and mix the spicy mayo in thoroughly. Add some salt according to taste.
  3. Assemble all the other ingredients.
  4. Combine the tuna mix with the rest of the ingredients, check for salt. Add in chilli flakes as needed or drizzle a mix of the sriracha and tomato sauce for some extra flavour.

    1. Thank you Georgetta. I personally have not tried it with canned chicken but I do not see any problem with using that instead of tuna. If I had it , I would surely give it a go. Hope it turns out good.
