Chocolatey Banana Loaf

Today I share a yummy Banana loaf that is filled with some chocolatey goodness. It has got a combination of chocolate chips and melted dark chocolate in it. If a Healthier Banana bread is more your thing, you can check my recipe here. How I ended making this – I started with the intention of making a standard banana loaf, I did have plenty of very ripe bananas that I wanted to use up. And as I was getting all the ingredients together, I realised that I had only about ½ cup of chocolate chips when the recipe called for … Continue reading Chocolatey Banana Loaf

Fruitilicious Smoothie

I have got another yummy, cool and colourful smoothie that I would like to share. This is a fruit rich smoothie and what I mean by that is that there are just 4 different fruits in it with a dash of honey and nothing else. Very simple isn’t it, and the taste is just absolutely lovely. This is just great for breakfast. I made this for myself, but hubby had a taste and decided that he would like to have one too, he is usually not a big smoothie person so that was a yay for me. The four fruits … Continue reading Fruitilicious Smoothie

Spicy Baked Chicken Strips

Today I am sharing an easy and quick to make chicken recipe. It is a one bowl kind of recipe; the chicken is cut into the desired size and shape and pretty much mixed with the marinade and then popped into the oven. It is a reasonably healthy dish as it is baked and only a limited amount of oil added to the marinade. It goes great with some Turmeric rice, salad or even some roast veggies. The spice comes in from the addition of sriracha, which is a hot sauce. If you do not have sriracha, you can use … Continue reading Spicy Baked Chicken Strips

Easy Tuna Rice Bean Salad

Today I share a very simple and healthy lunch idea. This is easy to put together, filling and nutritious. I use tuna in this recipe, I always have canned tuna at home and it can be used to make something delicious without going into too much effect especially if time is of concern. Fresh cucumber is a lovely addition adding crunch and volume. Corn and black beans are amazing nutrition wise and quite filling. You can use either kidney beans or cannellini beans if you do not have black beans at hand. I used basmati rice this time. But you … Continue reading Easy Tuna Rice Bean Salad

Zucchini Carrot Pancakes

This recipe is tasty and super simple to make. It is a great way to incorporate some veggies into your meal. It can be had for breakfast, brunch or even a snack. For this recipe, I used one large zucchini and one large carrot. You can easily double up the recipe of you want to make more. I had one zucchini left in my fridge that needed to be used up and this was a great way to do just that. After I grated the veggies, I put them in the microwave for about 2 minutes, giving them a bit … Continue reading Zucchini Carrot Pancakes

Delicious Coffee Smoothie

You all know by now that I love smoothies. This is another one that is so simple to make and delicious. This is a great way to combine your breakfast and coffee. The addition of coffee in it is ideal for that wake up we need either in the morning or when we are in that afternoon slump. This smoothie is quite filling and I have been loving it for my breakfast almost daily for the last few days. The addition of cinnamon adds a lovely flavour and has health benefits like anti-inflammatory properties, lowers blood sugar levels and is … Continue reading Delicious Coffee Smoothie

Carrot Corn Pea Bean Spinach Soup

It is winter here and although it does not get cold enough to snow here in Perth, temperatures in single digits (Celsius) makes us want something warm and comforting for dinner. I wanted to make something with a mix of veggies in it, and not too heavy. When I looked in the fridge and realised I had quite a few odds and ends left over from previous meal preps (I had made some Mexican themed burritos earlier and had left over corn and beans from it), I decided to use them and add in some other veggies I had in … Continue reading Carrot Corn Pea Bean Spinach Soup

Citrusy Green Smoothie

Smoothies are my favourite way of ensuring that I have my daily intake of healthy fruits and veggies. The weather here down under is colder and as such it is a good time to load up with some extra vitamin c and other nutrients. This smoothie has just five ingredients – two fruits and 2 greens with milk. I love banana and they are such a good addition to any smoothie, in addition to the health benefits, … Continue reading Citrusy Green Smoothie

Barramundi in Creamy Garlic sauce

Smothered in a lovely creamy garlic sauce this recipe is bursting with flavour. It is simple and easy to make and so delicious. I used fresh garlic and plenty of it. Spinach and the sundried pesto add lovely flavour. I used skinless Barramundi fillets, we as a family love it, but you can use any fish of your choice. I did season it with salt and pepper in the beginning and seared the fish so that it would not break up and also gives it a beautiful golden colour. Fish does cook really quick so while doing this step of … Continue reading Barramundi in Creamy Garlic sauce

Nutritious Oat and Nut Bars

I love a filling and healthy bar that can be eaten for a quick and filling breakfast or a snack. This bar is filled with healthy goodness such as nuts (walnuts) seeds (pumpkin and sunflower), some fruit (banana) and some dried fruit (Raisins) The walnuts add a lovely crunch, packed with nutrients such as monounsaturated fats and omega-3 fatty acids and helps keep you fuller for longer. The raisins are packed with energy, full of fibre, vitamins, minerals and they add that lovely natural sweetness. Although they are rich in calories, eaten in moderate amounts is good for health.
