Healthy Low Carb Carrot Walnut Loaf

This loaf is super healthy and delicious. Great for breakfast or a snack and its tastes amazing with a smear of butter on it. This can also be made into muffins. The addition of the yoghurt gives that lovely moist consistency and the butter can be completely eliminated but I find the addition of that bit of butter does add to the flavour. This is a simple salad that can be put together really quick with ingredients that we usually have at home. The flavour is so fresh and is a great addition to a meal. The freshness of the cucumber, the juicy tomatoes, creamy avocado and the little bit of heat from the red onion is a great combination.
