
This dish serves as a low carb and lower calorie substitute to regular mashed potatoes and it tastes so good. It truly should not be a substitute in any sense, the taste makes it a standout side dish.
I haven’t made mashed potatoes once I started this and I do not intend to go back. My son usually loves his mashed potatoes and he loves this.
Making this is so much easier and quicker than with potatoes. All we need to do is roughly chop the cauliflower florets and cook them in the microwave and once cooled, put them in the food processor with cream and it is mostly done.
Cauliflower is a good source of fibre, keeping us feeling fuller for longer.
The secret to getting it to taste good is the flavouring, just cooking or steaming cauliflower and mashing them will not give us yummy cauliflower mash. The garlic, cream and butter are important to getting this to taste right. Also ensure that while it is blending in the food processor, it gets done till there are no chunks in it.
Adding the cream while it is blending aids in getting a creamy and smooth texture.
I added black pepper in this, if you prefer not to see flecks of pepper in it, you can add white pepper.

Let’s get to the recipe
Ingredients
Cauliflower – 1 large
Cream – 100ml -150ml depending on size of the cauliflower
Butter – 30gms or 2 tablespoons
Garlic powder – 1 tablespoon
Salt
Pepper


Method
- Chop up the cauliflower florets and cook in the microwave till it is completely done. For a large cauliflower and in my microwave (850w), I needed 12 minutes till it was done. Allow it to cool for a bit.
- Place the cauliflower in the food processor, add in the garlic powder and cream and blend till it gets smooth without any chunks in it.
- Take a saucepan and heat up the butter in it, then add the mashed cauliflower and mix, add in salt and pepper.
- Check for taste and once thoroughly warmed up it is ready to serve.

It’s amazing to me how many things are made with cauliflower these days. – cheese crackers and pizza crust for a gluten free diet, cauliflower rice for lower carbs, and now this yummy side dish. It makes me laugh, because when I was growing up, I hated cauliflower, and now I eat something made with it at least once a day.

I know right. Who would have thought of all these things before. I remember not being too excited when my mum made something with cauliflower and I knew I had to finish what was in my plate so I used to finish it first so that I could enjoy the rest of the meal 😁.

I have tried cauliflower rice before and really did not like it as much. But when I first thought of trying this I was not entirely convinced but when it turned out good I was sure this was a keeper.
