Barramundi in Creamy Garlic sauce

Smothered in a lovely creamy garlic sauce this recipe is bursting with flavour. It is simple and easy to make and so delicious. I used fresh garlic and plenty of it. Spinach and the sundried pesto add lovely flavour. I used skinless Barramundi fillets, we as a family love it, but you can use any fish of your choice. I did season it with salt and pepper in the beginning and seared the fish so that it would not break up and also gives it a beautiful golden colour. Fish does cook really quick so while doing this step of … Continue reading Barramundi in Creamy Garlic sauce

Turkey Mushroom and Spinach Meatball Curry

We were sitting at home and watching a cooking show, the chef made some meatballs and my son turned to me and said “Can we please make some meatball curry and maybe some Naan to go with it”. So, that is how I ended making this over the weekend. I usually make meatballs with beef but this time I thought I would do it a little differently and the family loved it. The meatballs are a combination of turkey mince, mushrooms, spinach, red onion and some lovely spices. I like to incorporate some veggies into the meatballs so that way … Continue reading Turkey Mushroom and Spinach Meatball Curry

Healthy Low Carb Carrot Walnut Loaf

This loaf is super healthy and delicious. Great for breakfast or a snack and its tastes amazing with a smear of butter on it. This can also be made into muffins. The addition of the yoghurt gives that lovely moist consistency and the butter can be completely eliminated but I find the addition of that bit of butter does add to the flavour. Honey completely replacing the need for any refined sugar making it so much healthier. And the addition of almond flour reduces the amount of plain flour needed making this lower in carb content. This is a healthy … Continue reading Healthy Low Carb Carrot Walnut Loaf

I know that for those living in cooler parts of the world, having a cold smoothie may not be what you are feeling right now. But before we here in Australia head into cooler weather, I am making use of the beautiful sunshine and warmer weather. And this smoothie is a very tasty and refreshing drink that is ideal for warmer weather. This is one of those smoothies that is not much to look at but tastes so so yum. It is quick to make, great for a quick breakfast or an after-school filler. It just needs four ingredients – … Continue reading Watermelon Banana Smoothie

Tandoori Chicken

An easy and simple recipe made with accessible ingredients. The chicken is infused with spices and yoghurt and baked until golden with some charred bits. This tandoori is tender, moist, juicy and so YUM. The yoghurt makes the chicken tender and moist. I made this in my pizza oven this time but have made it many times before in my regular oven. But broiling it is necessary to get the desired charred results. This is quite a healthy dish and keto friendly for those on a keto diet. The traditional tandoori has a deep red colour that can be achieved … Continue reading Tandoori Chicken

Peanut Butter Oatmeal Nut Bars

Summer holidays are finally over. Today the kids are back at school and I must admit I am liking it. With school in session again I am prepping to satisfy the after school “Mum, I am hungry” roared as soon as he walks in the door. Oatmeal peanut butter bars are not only a healthy breakfast bar, they make great afternoon snacks. My son loves to have them when he gets home from school with a glass of milk. They are so easy to make and so tasty. They are firm but still melt in your mouth. The combination of … Continue reading Peanut Butter Oatmeal Nut Bars

Oreo Chocolate Mousse and Cream Parfaits

There is something beautiful about making and serving individual sized desserts. I feel like a fancy chef when I do. This recipe is easy to make and looks like there was a lot more work put into it than what it actually requires. This can be made ahead as it will keep well in the fridge for a few days but it would be best to leave the sprinkling of the cookie crumbs on the top to just prior to serving. There are three layers to this dessert – an Oreo cookie layer, a chocolate mousse layer and a whipped … Continue reading Oreo Chocolate Mousse and Cream Parfaits

Pumpkin Loaf

Although thanksgiving is not an Australian celebration, I still love making recipes that incorporate pumpkin around this time. A few years ago, my neighbours were from America and they introduced me to a lot of thanksgiving foods and so I always think about making some pumpkin related recipes around this time in memory of the wonderful time I had with them. Homemade pumpkin bread has become a family favourite. It is so easy to make and is packed with pumpkin flavour. I have always made this using homemade pumpkin puree. I use butternut pumpkin which is chopped up and cooked … Continue reading Pumpkin Loaf

Simple Seared Tuna Steaks

This is a very simple, easy and elegant way to prepare tuna steaks. It takes only a few minutes to prepare and is bursting with flavour. My husband had this on one of his work trips and loved it and came back home and wanted me to give this a go. He was my sous chef for a bit. My son is not a big fan of fish and was very sceptical as he tasted it but he ended up loving this. I served this tuna steaks drizzled with a homemade vinaigrette with sushi rice and a green salad A … Continue reading Simple Seared Tuna Steaks
