One Pot Chicken and Mushroom Risoni Pasta

A quick, easy and creamy Risoni pasta that is ideal for weeknight dinners. Risoni pasta also known as Orzo pasta resembles large grained rice. I was inspired by one of the Domestic Geek’s recipes and I added my flare to it and made it my own. This pasta recipe does not require you to cook the pasta separately and then add it into the sauce. This is all done in one pot making it so much easier and it takes all of about 20 – 30 mins from start to finish. The protein that you use here can be according … Continue reading One Pot Chicken and Mushroom Risoni Pasta

Crustless Roasted Peppers and Mince Quiche

This simple and easy to make Crustless quiche is great for a weeknight dinner and is an awesome way to use leftovers. It is an amazing alternative if you don’t want all the carbs and butter in the crust. And is so tasty that you will not miss the crust one bit. The beauty of making a quiche is the opportunity to just throw in whatever meat one has in the fridge. I deviated from the classic ham and cheese variety and used beef mince to which I added some cumin, garlic and red chilli for some heat.   I … Continue reading Crustless Roasted Peppers and Mince Quiche

Creamy Garlic Cauliflower Mash

This dish serves as a low carb and lower calorie substitute to regular mashed potatoes and it tastes so good. It truly should not be a substitute in any sense, the taste makes it a standout side dish. I haven’t made mashed potatoes once I started this and I do not intend to go back. My son usually loves his mashed potatoes and he loves this. Making this is so much easier and quicker than with potatoes. All we need to do is roughly chop the cauliflower florets and cook them in the microwave and once cooled, put them in … Continue reading Creamy Garlic Cauliflower Mash

Fruitilicious Smoothie

I have got another yummy, cool and colourful smoothie that I would like to share. This is a fruit rich smoothie and what I mean by that is that there are just 4 different fruits in it with a dash of honey and nothing else. Very simple isn’t it, and the taste is just absolutely lovely. This is just great for breakfast. I made this for myself, but hubby had a taste and decided that he would like to have one too, he is usually not a big smoothie person so that was a yay for me. The four fruits … Continue reading Fruitilicious Smoothie

Spicy Baked Chicken Strips

Today I am sharing an easy and quick to make chicken recipe. It is a one bowl kind of recipe; the chicken is cut into the desired size and shape and pretty much mixed with the marinade and then popped into the oven. It is a reasonably healthy dish as it is baked and only a limited amount of oil added to the marinade. It goes great with some Turmeric rice, salad or even some roast veggies. The spice comes in from the addition of sriracha, which is a hot sauce. If you do not have sriracha, you can use … Continue reading Spicy Baked Chicken Strips

Easy Tuna Rice Bean Salad

Today I share a very simple and healthy lunch idea. This is easy to put together, filling and nutritious. I use tuna in this recipe, I always have canned tuna at home and it can be used to make something delicious without going into too much effect especially if time is of concern. Fresh cucumber is a lovely addition adding crunch and volume. Corn and black beans are amazing nutrition wise and quite filling. You can use either kidney beans or cannellini beans if you do not have black beans at hand. I used basmati rice this time. But you … Continue reading Easy Tuna Rice Bean Salad

Zucchini Carrot Pancakes

This recipe is tasty and super simple to make. It is a great way to incorporate some veggies into your meal. It can be had for breakfast, brunch or even a snack. For this recipe, I used one large zucchini and one large carrot. You can easily double up the recipe of you want to make more. I had one zucchini left in my fridge that needed to be used up and this was a great way to do just that. After I grated the veggies, I put them in the microwave for about 2 minutes, giving them a bit … Continue reading Zucchini Carrot Pancakes

Barramundi in Creamy Garlic sauce

Smothered in a lovely creamy garlic sauce this recipe is bursting with flavour. It is simple and easy to make and so delicious. I used fresh garlic and plenty of it. Spinach and the sundried pesto add lovely flavour. I used skinless Barramundi fillets, we as a family love it, but you can use any fish of your choice. I did season it with salt and pepper in the beginning and seared the fish so that it would not break up and also gives it a beautiful golden colour. Fish does cook really quick so while doing this step of … Continue reading Barramundi in Creamy Garlic sauce
