Barramundi in Creamy Garlic sauce

Smothered in a lovely creamy garlic sauce this recipe is bursting with flavour. It is simple and easy to make and so delicious. I used fresh garlic and plenty of it. Spinach and the sundried pesto add lovely flavour. I used skinless Barramundi fillets, we as a family love it, but you can use any fish of your choice. This loaf is super healthy and delicious. Great for breakfast or a snack and its tastes amazing with a smear of butter on it. This can also be made into muffins. The addition of the yoghurt gives that lovely moist consistency and the butter can be completely eliminated but I find the addition of that bit of butter does add to the flavour.
