Easy and Delicious Dumpling Soup

This delicious dumpling soup is easy to make and bursting with flavour. You can make your own dumplings if you would like to. I have used frozen ones here. It makes it that much simpler and faster to whip this up.

The combination of the ginger, garlic, soy and sesame in a clear broth are just perfect.

How much heat to the dish you add is totally up to you, you can completely skip it or add a little for a mild amount of heat or you can go all in and add more.

This is perfect for a rainy day, or when it is a tad cooler weather wise.

Ingredients ( Serves 2)

Frozen dumplings of choice (For 2 serves, I used 12 )

Chicken stock – 400ml

Garlic – 2 cloves

Ginger – 2tsp ground

Spring onion – 2 chopped fine

Soy sauce – 2 tbsp

Honey – 2tsps

Rice wine vinegar – 2 tsps

Sesame oil

Crispy chilli flakes – 1-2 tsp depending on personal preference or if you prefer you can skip it all together

Bok choy – 2 small bunches, chopped roughly

Method

  1. In a pan, put some oil, fry the spring onions then add the ginger and garlic and fry till aromatic.
  2. Add in the stock, soy sauce, honey, rice wine vinegar and sesame oil and allow to boil. Once it boils, reduce the flame and allow to simmer.
  3. Add in the dumplings and cook for about 4 mins.
  4. Add in the bok choy, cook till the dumplings are completely done. The bok choy will be cooked but will still have crunch to it.
  5. Add in the crispy chilli flakes (if using) and serve.
