Barramundi in Creamy Garlic sauce

Smothered in a lovely creamy garlic sauce this recipe is bursting with flavour. It is simple and easy to make and so delicious. I used fresh garlic and plenty of it. Spinach and the sundried pesto add lovely flavour. I used skinless Barramundi fillets, we as a family love it, but you can use any fish of your choice. Avocado and Coriander Spread/Dip

This quick and fresh recipe is so easy to put together and makes for a great dip or spread. I love having this on Toast or with Quesadillas or tacos. This definitely is a relative of guacamole.
