Smothered in a lovely creamy garlic sauce this recipe is bursting with flavour. It is simple and easy to make and so delicious. I used fresh garlic and plenty of it. Spinach and the sundried pesto add lovely flavour. I used skinless Barramundi fillets, we as a family love it, but you can use any fish of your choice. Healthy Low Carb Carrot Walnut Loaf

This loaf is super healthy and delicious. Great for breakfast or a snack and its tastes amazing with a smear of butter on it. This can also be made into muffins. The addition of the yoghurt gives that lovely moist consistency and the butter can be completely eliminated but I find the addition of that bit of butter does add to the flavour. Honey completely replacing the need for any refined sugar making it so much healthier. And the addition of almond flour reduces the amount of plain flour needed making this lower in carb content. An easy and simple recipe made with accessible ingredients. The chicken is infused with spices and yoghurt and baked until golden with some charred bits. This tandoori is tender, moist, juicy and so YUM. The yoghurt makes the chicken tender and moist. I made this in my pizza oven this time but have made it many times before in my regular oven.
