Today I share a very simple and healthy lunch idea. This is easy to put together, filling and nutritious. I use tuna in this recipe, I always have canned tuna at home and it can be used to make something delicious without going into too much effect especially if time is of concern. Avocado Cucumber and Tomato Salad

This is a simple salad that can be put together really quick with ingredients that we usually have at home. The flavour is so fresh and is a great addition to a meal. The freshness of the cucumber, the juicy tomatoes, creamy avocado and the little bit of heat from the red onion is a great combination. If you are not a fan of coriander, you can skip that or add cilantro instead. I add only a bit of coriander to give that hint of flavour without overpowering the whole thing.
