Avocado Cucumber and Tomato Salad

This is a simple salad that can be put together really quick with ingredients that we usually have at home. The flavour is so fresh and is a great addition to a meal.

The freshness of the cucumber, the juicy tomatoes, creamy avocado and the little bit of heat from the red onion is a great combination. If you are not a fan of coriander, you can skip that or add cilantro instead. I add only a bit of coriander to give that hint of flavour without overpowering the whole thing.

The dressing is simple and adds great flavour.

This salad is very healthy and is a great way to eat something yum while being conscious of what goes into your body.

Ingredients for the Salad

Cucumber – 1.5 cups

Tomatoes – 1 cup

Onions – ½ cup

Avocado – ½

Coriander leaves – 2 teaspoons (chopped)

Ingredients for the Dressing

Olive oil – 1 tablespoon

Garlic powder – 1 teaspoon

Lemon juice – 1 tablespoon

Dijon Mustard – 2 teaspoons

Salt and pepper – to taste

Method

  1. Chop the cucumber, tomatoes and coriander leaves. Slice the onions and dice the avocado. Place them all in a bowl.
  2. Prepare the dressing, mix together all the ingredients in a small bowl and pour over the prepared vegetables. The consistency of the dressing will be thick because of the mustard.
  3. Toss gently to combine.
  4. Just before serving add in the salt and pepper and toss gently again.
