Nutritious Oat and Nut Bars

I love a filling and healthy bar that can be eaten for a quick and filling breakfast or a snack.

This bar is filled with healthy goodness such as nuts (walnuts) seeds (pumpkin and sunflower), some fruit (banana) and some dried fruit (Raisins)

The walnuts add a lovely crunch, packed with nutrients such as monounsaturated fats and omega-3 fatty acids and helps keep you fuller for longer. The raisins are packed with energy, full of fibre, vitamins, minerals and they add that lovely natural sweetness. Although they are rich in calories, eaten in moderate amounts is good for health.

Pumpkin seeds are a good source of valuable nutrients such as magnesium, manganese, iron and zinc among other things. The sunflower seeds gives you protein and healthy fats and I just love adding these tiny nuggets of goodness to bars or salads.

The banana is a healthy and a naturally sweet addition.

The egg helps to bind everything together.

The almond butter adds lovely taste and richness to the bars.

You can choose between adding sugar or honey. The Honey would be the healthier option. The golden syrup helps make it all stick together as when I made it this time I used sugar instead of honey.

This is an easy, one bowl recipe that can be made in advance for easy to grab healthy bites during your busier days.

Let’s get to the recipe

Ingredients

Rolled Oats – 2 cups

Almond butter – 1/2 cup

Golden syrup – 1/4 cup

Banana – 4 medium sized

Walnuts – ½ cup (roughly chopped)

Pumpkin seeds – ¼ cup

Sunflower seeds – 1/4 cup

Sugar or Honey – ¼ cup

Vanilla Essence – 1 teaspoon

Cinnamon powder – 1 teaspoon

Egg – 1

Method

  1. Mash the banana. Then add in the remaining ingredients and mix together.
  2. Transfer the mix into a lined baking tray and bake at 180 degrees Celsius for 20-25 mins or until it develops a lovely golden colour on the top.
  3. Allow to cool and then cut into desired size.
  4. These can be stored outside for a few days.
