This loaf is super healthy and delicious. Great for breakfast or a snack and its tastes amazing with a smear of butter on it. This can also be made into muffins.
The addition of the yoghurt gives that lovely moist consistency and the butter can be completely eliminated but I find the addition of that bit of butter does add to the flavour.
Honey completely replacing the need for any refined sugar making it so much healthier. And the addition of almond flour reduces the amount of plain flour needed making this lower in carb content.
This is a healthy way to incorporate some carrots which are good for fussy eaters and helps keep everyone fuller for longer.
The walnuts are purely optional. If anyone at home has a nut allergy, you can replace it with some raisins or sultanas and also completely replace the almond flour with plain flour instead.
Ingredients
Eggs – 3
Butter – 2 tablespoons
Greek Yoghurt -3 heaped tablespoons
Honey – ½ cup
Milk – ¼ cup
Carrots -2 grated
Plain Flour – ¾ cup
Almond Flour – ¾ cup
Baking powder – 2 teaspoons
Vanilla Extract – 1 teaspoon
Cinnamon – ½ teaspoon
Nutmeg – ½ teaspoon
Walnuts – ½ cup
Method
- Preheat oven to 180degrees Celsius and line a loaf tin with baking paper.
- In a large bowl, whisk the eggs until light and fluffy and add in the melted butter
- Then add in the yoghurt and mix till well incorporated.
- Once done, pour in the honey, milk, vanilla extract and mix through.
- Add in the grated carrots, almond flour, plain flour, baking powder, the cinnamon and nutmeg. Mix through.
- Finally add in the chopped Walnuts and mix.
- Pour the batter into the lined loaf tin and bake for about 30-40 mins till the cake tester comes out clean.

I love a good loaf and always try to incorporate different things in it. I usually love them for breakfast. And cream cheese sounds real good with that.
