Chocolatey Banana Loaf

Today I share a yummy Banana loaf that is filled with some chocolatey goodness. It has got a combination of chocolate chips and melted dark chocolate in it. If a Healthier Banana bread is more your thing, you can check my recipe here. How I ended making this – I started with the intention of making a standard banana loaf, I did have plenty of very ripe bananas that I wanted to use up. And as I was getting all the ingredients together, I realised that I had only about ½ cup of chocolate chips when the recipe called for … Continue reading Chocolatey Banana Loaf

Healthy Low Carb Carrot Walnut Loaf

This loaf is super healthy and delicious. Great for breakfast or a snack and its tastes amazing with a smear of butter on it. This can also be made into muffins. The addition of the yoghurt gives that lovely moist consistency and the butter can be completely eliminated but I find the addition of that bit of butter does add to the flavour. Honey completely replacing the need for any refined sugar making it so much healthier. And the addition of almond flour reduces the amount of plain flour needed making this lower in carb content. This is a healthy … Continue reading Healthy Low Carb Carrot Walnut Loaf

Pumpkin Loaf

Although thanksgiving is not an Australian celebration, I still love making recipes that incorporate pumpkin around this time. A few years ago, my neighbours were from America and they introduced me to a lot of thanksgiving foods and so I always think about making some pumpkin related recipes around this time in memory of the wonderful time I had with them. Homemade pumpkin bread has become a family favourite. It is so easy to make and is packed with pumpkin flavour. I have always made this using homemade pumpkin puree. I use butternut pumpkin which is chopped up and cooked … Continue reading Pumpkin Loaf

Easy Low Carb Almond Loaf

This is a healthy, quick and easy Almond Loaf. I use almond meal instead of plain flour which reduces the carb content and I use honey instead of sugar, making it so much healthier. If you are new to low-carb baking, using almond meal is quite easy to begin with. But you have to remember that unlike regular flour, almond flour does not hold its structure as well because of the absence of gluten. The eggs added provide that structure, air for fluffiness and some protein as well. I have not used any butter or oil in it. I wanted … Continue reading Easy Low Carb Almond Loaf

Pear and Pecan Loaf

This loaf is easy to make and so tasty. This is a yummy way to use up any extra pears you have at home. The Pear and Pecan complement each other so well. It is great as a brunch or breakfast bread. The cinnamon and nutmeg take the flavours to another level. I chopped the pear into small pieces, but you can choose to grate instead. The Pecans are roughly chopped as I like to bite into bits of pecan. This does freeze really well. And can also be made into muffins. Ingredients Vegetable oil – ½ cup Caster Sugar … Continue reading Pear and Pecan Loaf

Quick Orange, Date and Walnut Loaf

I love a loaf with some fresh citrusy and fun flavours that I can just eat as is without having to slather something on it. This recipe is so simple to throw together – for starters, a whole orange (with the peel on!) along with orange juice, egg and oil are mixed in your blender. How easy is that!!! The dry ingredients are also just put together in the blender except for the dates and walnuts as we want them as yummy bits in the loaf and hence are added and mixed in at the end. Dates are like natures … Continue reading Quick Orange, Date and Walnut Loaf
