These healthy bites are quick to assemble, rich in protein and made with all-natural ingredients. They are great when you feel peckish between meals and are such a healthy alternative to grabbing a cookie.
Dates like I always say are natures candy and add that natural sweetness to these along with a little honey.
Peanut butter adds flavour, healthy fats and helps to get the stickiness to shape them into balls.
I have described two ways of making this snack.
The first one has desiccated coconut along with the coconut flour and cocoa and more of peanut butter. To compensate, the amount of almonds and dates are reduced.
There are more almonds, dates and honey in the second variation. I added some pumpkin kernels in this one as they are a good source of protein. This variation definitely has more bite – texture wise as the dates are not pre-soaked and softened in contrast to the first one which is smoother in texture.
But whichever one you give a try, both are tasty, healthy and so easy to make.
These can be easily stored in the fridge to nibble on during the week.
Ingredients – First Variation
Coconut Flour – ½ cup
Desiccated Coconut – ½ cup
Cocoa – 2 tablespoons
Peanut Butter – 4 tablespoons
Almonds – ½ cup
Dates – ½ cup
Honey – 2 tablespoons approximately (measurement can vary to get the required consistency)
Ingredients – Second Variation
Coconut flour – 1 cup
Almonds – 1 cup
Dates – 1 cup
Peanut butter – 2 tablespoons
Pumpkin Kernels – 1 tablespoon (optional)
Honey – ¼ cup approximately (measurement can vary to get the required consistency)
Method
- Only for the first variation, soak the dates in hot water for about 10 mins, this softens them up and allows them to blend well giving them a smoother consistency.
- Place all the ingredients in a food processor and process till well combined.
- Wet your hands and shape the mix into balls
- Can be eaten right away or stored in the fridge.

If you feel the balls are a bit soft, keep them in the fridge for about an hour so they firm up a bit prior to eating.
