It has been a while since I have posted a recipe. Today I share a family favourite snack – Granola Cookies.


When I make these, I do not attempt to make them healthier or anything of the sort. These are meant to be enjoyed decadent. Although we all know we should be making healthy choices on a regular basis, sometimes we do need an indulgent treat with a cup of tea or coffee and this cookie is just perfect for such a treat.
This is a very easy to put together. Just requires a bit of patience once you make the cookie dough as they have to sit in the fridge for about an hour. This makes the butter harden, so when you bake them, they spread less and hold their shape better. Overall, the consistency of the cookie is soft and has the right about of chewiness to it.
The reason for both white and brown sugar – White sugar is used primarily for sweetness, while brown sugar has additional flavour and moisture. The molasses in brown sugar gives it more flavour and slightly denser texture. You can use only white sugar, but personally have always preferred to use a mix of both as the end product is so much better with the combination.
I use store bought granola mix. The type of granola is something that you can cater according to personal preference or even make a mix of your own to use.



Ingredients
Softened Butter – 185gms
Caster Sugar – ½ cup
Brown sugar – ¾ cup
Egg – 1
Vanilla Essence – 1 teaspoon
Plain Flour – 1 ¾ cup
Baking Soda – 1 teaspoon
Salt – ¼ teaspoon
Granola – 2 cups
Raisins – a handful extra (optional)
Method
- Heat oven to 180 deg C.
- Melt the butter in 30 sec intervals in the microwave (I use a large microwave safe bowl in which I can later add in the dry ingredients)
- Mix in the caster and brown sugar with an electric mixer until well dissolved.
- Combine the flour, baking soda and salt in a separate bowl.
- Add the dry ingredients to the wet ingredients and give a rough mix with a spatula.
- Mix in the Granola and extra raisins and mix with the spatula until the dough forms, it may seem a bit dry at the start but as you mix it eventually all comes together.
- Using an ice cream scoop, scoop out the cookie dough on a parchment lined baking tray, flatten a bit by pressing the top a tiny bit with the back of a spoon or just press down with your fingers.
- Place in the fridge for about an hour.
- Bake at 180 deg C for about 12-15 mins (timing depends on the oven, best to keep an eye in it once it hits the 12 min mark). The more you bake the crunchier it gets. So you can bake to your desired chewiness or crunchiness.
- Once done, allow to cool and then Enjoy!!!!
