Easy Tender Beef Stir Fry

This Beef fry is quick and easy to put together. The Pepper sauce is sticky, glossy and so yummy. It is great for a quick weeknight meal. This recipe is heavily inspired from The Beef stir fry recipe by Marion’s Kitchen.

The addition of soda bicarb helps tenderise the beef and the cornstarch helps the meat to get beautifully coated by the stir-fry sauce.

Ingredients

Scotch fillet Steaks – 2, approximately 500gms (can use rib eye, or rump)

Garlic cloves – 4

Bell peppers – 1 or 2 (chopped into bite sized pieces)

Onion – 1 sliced

Spring Onions – 2 sprigs, roughly chopped

Ingredients to Marinade the Beef

Light Soy sauce – 2 tablespoons

Chinese cooking wine – 1 tablespoon

Cornstarch – 1 flat tablespoon

Soda Bicarbonate – 1 flat teaspoon

Sauce for Stir Fry

Oyster Sauce – 3 tablespoons

Chinese cooking wine – 1-2 tablespoons

Light soy sauce – 2 tablespoons

Dark soy sauce – 1/2 tablespoon

Sugar – 1 tsp

Vinegar – 2 tsp

Ground Pepper – 2 flat tablespoons

Method

  1. First cut the meat. For stir fry, the best is to keep the pieces reasonably thin. Long strips and against the grain are best. This allows the meat to cook quickly. Thicker pieces will require more time to cook and the meat will stew rather than sizzle and brown in the heat.
  2. Once the meat is cut, marinade it and set aside.
  3. Roughly chop the garlic and the onion (not finely chopped, so that they do not get burned as they get tossed on high heat as the meat fries).
  4. Heat oil and add the garlic in and then the onion and fry for about a minute on high heat.
  5. Then push the garlic and onion to the side of the pan and put the beef in. Ensure that the beef is spread out such that all the pieces get a chance to brown. When I push the onion and garlic aside, I also keep the pan off-center on the flame so that most of the heat goes to the meat.
  6. Toss the meat such that both sides gets browned, then add in the chopped bell peppers. Give it a stir and allow to cook for a minute.
  7. Then add in the stir-fry sauce and stir allowing everything in the pan to get coated by the sauce. Cook for about another couple of minutes and add in the spring onions. Ensure meat is cooked, the peppers are the cooked to your preferred consistency and turn flame off.
  8. Serve with some sticky white rice.
