A Cranberry Pecan Sultana Twist

Hello to all you wonderful people reading this, I want to take this opportunity to wish you all a very blessed Christmas and a wonderful New year. This will be my last post for this year and I will be back in January.

I thought the best way to finish this year would be to share a recipe that will be ideal to make during this holiday season. This recipe is adapted from a video I watched on YouTube, the YouTuber goes under the name ‘The perfect refuge’, the link to the recipe is here. I followed this recipe with a couple of tweaks to give it my own flair and my family absolutely loved it. I thought I would share it here but all credit goes to the original recipe I followed from. I am sharing it because it was really good.

Ingredients

Plain Flour – 500grams

Eggs – 1

Yeast – dried – 1 packet -7grams

Butter – 80grams

Caster Sugar – 150 grams

Milk – 180 ml, warm

Sultanas – ¼ cup

Cranberries – ¼ cup

Pecans – ¼ cup chopped

Method

  1. Start by soaking the sultanas and cranberries in hot water and set aside.
  2. Chop the pecans and set aside.
  3. Put the flour in a large bowl.
  4. Add in the yeast, the egg, sugar and butter.
  5. Add in the warm milk and knead the dough.
  6. Wrap it and keep in a warm place letting it rise for about 2 hours. Coat the dough with a bit of oil before setting it aside as it helps it to stay moist and does not stick to the bowl when it is time to take it out.  
  7. After a couple of hours, using a rolling pin, roll out the dough into a roughly rectangular shape with a couple of cms thickness to it.
  8. Sprinkle some sugar on the dough, and spread out the soaked and drained cranberries and sultanas and then the chopped pecans. I dolloped small clumps of butter across the surface which will melt through when it bakes.
  9. Roll it lengthwise.
  10. You can either cut it making pinwheels if you find that easier but if you are looking for something fancier cut it a few cms from one end through the middle and twist (as can be seen in the picture). Then curve the ends till they meet and voila you have a fancy looking creation.
  11. Bake at 180 degrees Celsius for about 30-35 minutes and till it has that beautiful golden brown colour on the surface.
