This easy to make fluffy and filling omelette is great for breakfast or brunch.
This recipe is ideal if you want to cut down on carbs as it is quite filling on its own and you can skip on eating bread along with it.
I made this after church on Sunday for brunch and my son ‘inhaled’ his meal with a glass of milk. I had mine at a more sedate and civilised pace with a lovely cup of tea.
Filled with red onions, green peppers and any left-over meat or sausages adds amazing flavour to this dish.
You can vary the taste by using different meats of your choice. The combination of the red onion and green peppers seasoned with some garlic and smoked paprika gives a beautiful flavour.
Adding some almond meal to the whisked eggs gives the omelette some body and holds the stuffing a bit better.
I used 2 large eggs and 1 large pork sausage per serve. For more servings, just multiply the recipe as needed.
Any cheese of your choice can be used here.
Ingredients for 2 serves
Eggs – 4 large
Pork sausage – 2 large or 4 small
Red onion – 1/2 cup sliced
Green Peppers – 1/2 cup sliced
Almond meal – 2 heaped tablespoons
Milk – 6 tablespoons
Garlic powder – 1 teaspoon
Smoked paprika – ½-1 teaspoon depending on how much heat you want
Cheese – shredded
Salt and pepper to taste
Method
- In a pan, pour a tablespoon of oil and fry the red onions for about 2-3 mins.
- Then add the green peppers and sauté till cooked through and soft.
- Add the meat of your choice – the idea here is to use left-over meat or sausages or even ham or bacon.
- The pork sausage used here was already cooked. If you are not using left overs or precooked meat, make sure to cook them at this stage along with the onions and peppers.
- Add the garlic powder, smoked paprika, salt and pepper, mix and set aside.
- Whisk the 4 eggs in a bowl, add in the milk and whisk through.
- Then add the almond meal to the egg mix and whisk through.
- Pour half the egg mix into a warmed pan with a little oil and allow to cook.
- Once the omelette is reasonably firm on the top, add half of the stuffing and cheese on one half of the omelette (see pic).
- Fold the non-filled half of the omelette over the stuffing mix and allow to sit on low flame till the cheese melts.
- Slide the stuffed omelette onto a plate and serve immediately.
- Make another one with the remaining half of the egg and stuffing mixture and serve.

My husband and I eat a lot of eggs. I like having the protein in the morning to keep hunger away until lunchtime. But I am getting a bit bored with scrambled eggs and fried eggs. So thank you for sharing this recipe. I never thought about adding almond meal to my omelets. I will have to give it a try!

I like having protein rich meals too as it keeps me fuller for longer. Have been recently trying out more low carb healthy meals and this is one of them, simple but tasty and different from the regular way we have eggs.

My daughter was trying a vegan diet to see if it helped any with her migraines, (It did not.) and the rest of the family went along with the experiment to be supportive. One night my husband walked in the door cracking up. I asked what was so funny. Apparently some dogs had been on the rampage and knocked over trash cans all over the neighborhood. – Pizza boxes, lunchmeat wrappings, hot dog packages, everywhere. On the entire street there was just one trash can that was still standing, and you can guess which one it was. (I guess the local dogs don’t care for vegan.)

Lol. Eating vegan does take some getting used to when you don’t normally eat that way. Some vegan foods are better than others. I recently found out that eating too much sugar in a short time gives me migraines. I hope your daughter finds a solution.
