Quick and Easy Turmeric Rice

My son is not a big fan of rice and frowns if I say there is rice for dinner but he does NOT complain when I make this.

This rice is quick to make and is an amazing accompaniment with a variety of dishes. It pairs well with Indian or Mediterranean dishes.

This turmeric rice is my go-to on a weeknight especially. It is not only delicious but so easy to put together.

The chicken stock adds a lovely flavour but you can use vegetable stock if that is your preference.

I used Basmati rice, as we like the flavour but you can use any rice of your choice.

I always make extra and use the left overs for lunch the next day.

I made this rice to go along with some chicken curry.


Ingredients

Basmati Rice – 1 ½ cups

Onions – 1 cup, chopped

Cumin powder – 1 tsp

Chilli powder – 1 tsp

Turmeric Powder – 1 tsp

Salt – 1 tsp or to taste

Chicken Stock – 2 ½ cups

Oil

Method

  1. Rinse the rice till water runs clear and drain.
  2. In a saucepan, heat oil and fry onions for about 3- 5 minutes till softened and translucent.
  3. Stir in the rice and fry for about 3-4 minutes.
  4. Stir in the cumin, chilli, turmeric powder and salt.
  5. Pour in the chicken stock and cook the rice.
  6. Fluff rice with a fork and serve.

  1. I didn’t know turmeric could be included in rice! I’ve used it in my curries and Golden milk but never once considered it in rice. Girl, I will be trying this as soon as the rice in my fridge is done. Come to think of it, do you think I could use it in the rice that’s already cooked? Following all the steps except that instead of the raw rice, use the cooked rice and make it like a fried rice of sorts?

    1. Turmeric can definitely be added to rice. For this recipe, it will not taste the same with pre cooked rice, but you can definitely make either a fried rice with left over chicken or even use eggs.
      Fry onions and add turmeric, garlic powder, chilli powder or chopped fresh chillies with some cumin and salt of course. Once this is done add the whisked eggs to it and scramble till eggs are cooked. Then add the pre cooked rice and mix, check for salt and voila you have a quick egg fried rice ready.
