Avocado and Coriander Spread/Dip

This quick and fresh recipe is so easy to put together and makes for a great dip or spread. I love having this on Toast or with Quesadillas or tacos.

This definitely is a relative of guacamole.

Avocados are so good for us, rich in vitamins and minerals and full of the good fats. Jalapenos add the required heat, the avocados and sour cream give the dish its lovely creaminess. You can opt for Greek yogurt instead of sour cream. The coriander adds amazing flavour and freshness along with the lemon. The pistachios add a lovely flavour and you can have small bits of the nut in the spread/dip and it does add an amazing bite.

This stays green for at least 4 days if stored in an airtight container.

Ingredients

Avocado – 2

Coriander – 1 cup roughly chopped

Jalapenos – 2 deseeded and roughly chopped

Garlic cloves – 6

Lemon Juice – 2 tablespoons

Sour cream – 1 tablespoon

Pistachios – ½ cup

Olive oil – 1 tablespoon

Salt – 1 teaspoon

Water – ¼ cup

Method

  1. Combine all the ingredients in a food processor and blend until smooth.
  2. Adjust the water content to obtain required consistency
  3. Taste and adjust for lemon and salt.

  1. Looks delicious. I found out I love avocados and guacamole when the 15 year old daughter of a refugee family made an avocado salad for me when I visited for dinner. I knew I had to eat it or she would be disappointed. I took the first bite and was surprised by how much I liked it. 🙂
